Chopped Salad with Chickpeas, Feta & Dill

You'll be blown away by fast this salad goes after you serve it. It's a crazy easy recipe that's super tasty. Its satisfying tanginess comes from homemade red wine vinaigrette.

      Chopped Salad

  • 2 - 15 oz cans chick peas, rinsed and drained
  • 2 pints grape tomatoes, halved
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 orange bell pepper, diced
  • 1 cup minced red onion
  • 1 cup crumbled feta cheese
  • 3 TB chopped fresh dill

      Red Wine Vinaigrette

  • 2 TB extra virgin olive oil
  • 1 TB red wine vinegar
  • 1 TB Dijon mustard
  • 1 TB kosher salt
  • ¼ tsp black pepper


Combine all chopped salad ingredients in a large bowl. Whisk together red wine vinaigrette ingredients and pour over salad just before serving. Toss to combine.
